One of the biggest issues about living alone is figuring out what to eat, especially during the holidays. You shouldn’t have to stress yourself to make an elaborate meal when you should be resting. Here’s a list of meals you can make in under 30 minutes, instead of ordering food.
1. Stir fry pasta
This is probably the easiest meal on the list. All you need are vegetables, spices, pasta and your protein of choice. After the pasta is boiled, the meal is pretty much done and the leftover value is worth it.
2. Pepper soup
As long as you have the necessary spices for the soup, you are good to go. Pepper soup is mostly boiling your chicken or goat meat with all the spices for about 30 minutes. It’s easy to make and great for the weather, especially if you have the Lagos flu.
3. Chicken stew
Chicken stew is a classic Nigerian meal. You can never go wrong with chicken stew. You can make a big bowl and have it with rice, yam or pasta whenever you want. If chicken isn’t your thing, you could swap for the protein of your choice. Same effects, same value.
4. Pancakes
Pancakes are so unbelievably filling if you get the recipe right. The best part is you can have it for breakfast, lunch or dinner because it’s your house and you pay the rent.
5. Yam and eggs
All you need to do is boil or fry the yam. The thing with yam and eggs is you can experiment however you want so go crazy.
6. Spicy native rice
If you get it right, you might get obsessed with the dish. It’s like cooking jollof rice but swap the groundnut oil for red oil and leave tomatoes out of it. Thank me later.
- Potato pottage
Asaro the great! The only problem with this food is cutting and peeling the potatoes. After that, it’s easy peasy. Toss all the ingredients together and boil to the consistency you want. If vegetables are your thing, add them at the end.
